Joanna's Oaxacan Tlayudas

One of my favorite recipes are Oaxacan Tlayuda's. My family and I always eat these when we visit Mexico. Everything is always better in Mexico, because it's fresh!
You start off with the huge tlayuda tortilla. The first layer is black beans. The way I prep the lettuce is I cut up onion and chiles de agua which are soaked with lemon. I let the chiles de agua and onion sit in the lemon juice. I add my lettuce in there so it can soak up the juice. Chorizo and tasajo is added after I lay the juicy lettuce. Fresh Oaxacan quesillo is added on top by strips. Avocado slices are placed on top as well. Grilled tomatoes and onions are optional, you can lay them or eat them on the side. Everything is topped by a salsa my grandma makes.
